Sharpening Single-Bevel Blades
Follow these 3 simple steps to sharpen most single-bevel
knives: Set-up, Sharpen, Hone
Set-up
•
Ensure the 20° knife guide is installed
•
Make sure the blade is clean and dry before sharpening
•
Set the power switch to low speed (I)

TIPS:
•
Follow the same process for double-bevel knives but... Only
use the sharpen stage on the beveled side of the blade as
shown below.
•
Not intended for use on traditional Japanese single bevel
knives. We recommend a good sharpening stone for those

Step 1: Sharpen
Left or right slot only

Step 2: Hone
10 strokes.
Both styles in the
same slot.
