Vanilla Frozen Yoghurt

Serves 6-8
375ml whole milk
175g granulated sugar
875g low fat vanilla yoghurt
60ml double cream
2 leaves gelatine (1/2 sachet)
Ensure the freezer bowl is completely frozen (see page 8).

Place the gelatine in a medium saucepan and pour over the whole milk. Leave to stand

for one minute then gently heat the milk and gelatine and stir until smooth.
Stir in the sugar and continue to gently heat until the sugar is dissolved. Transfer to a

medium bowl and cool to room temperature (Do not place in the refrigerator as this will
set the gelatine).
Stir in the yoghurt and cream. Cover and chill for 2-3 hours.

Once chilled, briefly whisk the mixture again.

Turn the appliance on, pour the chilled mixture into the freezer bowl and leave the frozen
n
yoghurt to churn for 20-25 minutes. This will produce a soft frozen yoghurt. For a firm
frozen yoghurt, transfer to an air tight container and place in the freezer for 2 hours.
