Wok This Way
Use a fiat-bottomed wok.
We recommend that you use
a fiat-bottomed wok, available
at Four local retail store.
Onlg a flat-bottomed wok should be used.
Do not use a flat-bottomed wok with a wok
holder.
Do not use a flat-bottomed wok on
a support ring. Placing the ring over
the burner or grate mag cause the burner
to work improperlg, resulting in carbon
monoxide levels above allowable current
standards. This could be dangerous to
gour health.
Cookware
Use large diameter cookware on rear
burners.
Aluminum: Medium-weight cookware is
recommended because it heats quicklg
and evenlg. Most foods brown evenlg
in an aluminum skillet. Use saucepans
with tight fitting lids when cooking
with minimum amounts of water.
Enamelware: Under some conditions,
the enamel of some cookware may
melt. Follow cookware manufacturer's
recommendations for cooking methods.
Glass:There are two tgpes of glass
cookware: those for oven use onlg
and those for cooktop cooking (saucepans,
coffee and teapots). Glassconducts heat
verg slowlg.
Cast Iron: If heated slowlg, most
skillets will give satisfactorg results.
Heatproof Glass-Ceramic: Can be
used for either surface or oven cooking.
It conducts heat verg slowlg and cools
verg slowlg. Check cookware
manufacturer's directions to be sure
it can be used on a gas cooktop.
Stainless Steel: This metal alone has
poor heating properties and is usuallg
combined with copper, aluminum
or other metals for improved heat
distribution. Combination metal skillets
usuallg work satisfactorilg iftheg are used
with medium heat as the manufacturer
recommends.

How to Operate the Downdraft
Vent
The built-in vent sgstem helps remove
cooking vapors, odors and smoke from
foods prepared on the cooktop.
To turn on the vent fan, use the vent
control switch on the control panel.
• Turn the vent fan speed control knob
to HI, MED or LO as needed.
NOTE:Even if the fan switch is
in the OFF position, the fan will
turn on automatically
and operate
continuously while the grill burner
module is in use.
System
Continuous use of the vent sgstem
while cooking helps keep the kitchen
comfortable and less humid, reducing
cooking odors and soiling moisture that
normallg creates a frequent need for
cleaning.
At the HI fan speed setting, it is normal
for the nearbg burner flames to be
drawn toward the vent grille. If cooking
performance is affected, then use a lower
fan speed setting.
IN CASEOFA POWERFAILURE,
THEVENTILATION SYSTEM WILL NOT
OPERATE. DO NOT USETHEGRILL
MODULEORGRIDDLEIF THE
VENTILATION SYSTEM IS NOT
OPERATIONAL.
