  • Page 12 BIGLA30-T SERIES GEN III LOV™ GAS FRYER CHAPTER 2: INSTALLATION INSTRUCTIONS General Installation Requirements Proper installation is essential for the safe, efficient, trouble-free operation of this appliance. Qualified, licensed, and/or authorized installation or service personnel, as defined in Section 1.6 of this manual, should perform all installation and service on Frymaster equipment.

Do not attempt to operate this appliance during a power outage. Never use matches, candles, or any other ignition source to check for leaks. If gas odors are de- tected, shut off the gas supply to the appliance at the main shut-off valve and immediately con- tact the local gas company or an authorized service agency for service.

Converting from one type of gas to another requires the installation of specific gas-conversion components. Conversion instructions are in- cluded with conversion kits. Switching to a different type of gas without installing the proper conversion components may result in fire or explosion.

  • Page 23 Equipment Setup and Shutdown Procedures WARNING The on-site supervisor is responsible for ensuring that operators are made aware of the inherent hazards of operating a hot oil filtering system, particularly the aspects of oil filtration, draining and cleaning procedures. CAUTION Before lighting the fryer, make sure the fryer is OFF and the frypot drain valves are closed.
  • Page 24 3.1.2 Lighting the Fryer 1. Ensure the controller is in the OFF position. 2. Turn the gas valve to the ON position. 3. Press the controller ON/OFF switch to the ON position. 4. If the burners fail to light, press the ON/OFF switch to the OFF position and wait 60 seconds. Repeat step 2.

The reservoir holds a 35-pound box of oil. In a typical operation this will last approximately two days.

One button push starts a cook cycle for a selected product. Just choose a menu item on a product button and press the START button under the display showing the desired item.

The setup includes language, date and time, temperature scale, sound settings, filter settings, energy savings, lane assignments and screen brightness.

For example, setting up a breakfast menu allows grouping of breakfast only products. This is helpful when switching products by narrowing the number of products to choose from.

Section 5.2 covers preparation of the filter system for use.

Use the manual gas shut-off valve to shut off the gas supply. The manual gas shut-off valve is located on the supply line be- fore the quick disconnects.

This film should be periodically removed by following the deep-clean (boil-out) procedure contained in Kay Chemical “Fryer Deep Clean Procedure” instructions.
