DO NOT lift the oven with pizza stone in place.
ALWAYS hold the oven from the underside of the base, NEVER from the inside of the upper shell.

Setup and assembly

  1. Choose a suitable position and surface for setup.
    1. The Ooni Modular or Folding Table or another sturdy metal or wood surface is ideal for oven support. Do not set your oven on plastic or glass tables. Always ensure the table can withstand the weight of the oven.
    2. The surface should allow for the mouth of the oven to face away from the wind and must be 1m away from any structure or combustible material.
    3. We recommend positioning the oven so the pizza stone sits at a height of 1.1 m from the ground.
  2. Carefully lift the oven out of the box and gently place it on a suitable surface.
  3. Unfold the legs ensuring the back leg locks into place with a click. To collapse the rear leg for storage, push the button to unlock.
  4. Place the oven in its intended location.

Installing the ignition battery

information The ignition battery compartment is located inside the front right leg (as you face the oven).

  1. Open by pulling down the tab and removing the cover, then install the supplied AA battery, paying attention to the +/- directions.
  2. Replace the cover and ensure it clicks back into place.

information If you are storing the oven for more than a month, remove the battery.

Inserting the pizza stone

informationThe pizza stone is heavy; be careful not to pinch your fingers.

  1. Using both hands, carefully lift and slide the pizza stone into position, taking care not to scratch the front pizza ledge.
  2. To remove the pizza stone, use one hand to push up through the hole in the base of the oven until the front of the pizza stone tips high enough to grab and slide out using your other hand. Never attempt to remove the pizza stone while it is hot.

Installing the gas hose pipe (if included)

Your oven may be supplied with the gas hose and regulator most suited to the gas supply found in your region of purchase (applies only to UK 37mBar and European 50mBar products). If you have an alternative gas cylinder then contact Ooni support. For ovens supplied without a regulators and hose then follow the below instructions:

Purchased or replacement regulators must be certified to EN16129 and hoses to EN16436, with a maximum length of 1.5m. Contact Ooni support or purchase from www.ooni.com if you are in any doubt.

This is a very tight fit. Make sure the loose jubilee clip is moved further down the hose away from the end prior to starting.

  1. Warm the end of the hose in a cup of boiled water for a few seconds to soften it. Push hose onto barb, ensuring it is fully seated over the sealing features. See images for reference.
  2. Slide the loose jubilee clip back over the hose-barb joint.
  3. Tighten jubilee clip with a suitable screwdriver.

Installing screw fit type hose.
informationThis is a left hand thread. Tighten onto product by turning in an anti-clockwise direction.
informationSee section on testing for leaks prior to using the oven.

Connecting to gas

informationTurn the control dial to the OFF position before connecting the gas cylinder.

Use only with cylinders under 13kg, with a maximum diameter of 315 mm and a maximum height of 580 mm. Take care when attaching or changing the gas cylinder and do so away from any ignition sources.
The appliance and the gas cylinder should be a minimum of 635mm apart. Connect only gas types that are listed on the rating plate.

Connecting the gas cylinder

Patio gas cylinder
informationThis gas cylinder type uses a push fit regulator with integrated valve.

  1. Inspect the valve connections, port and regulator assembly. Remove any debris and inspect the hose for damage.
  2. Make sure the oven control dial is in the OFF position.
  3. The regulator valve switch should also be in the vertical (OFF) position.
  4. Connect the regulator assembly to the cylinder by pushing the it onto the cylinder port until it clicks into place.
  5. Completely open the regulator valve by turning the switch to the horizontal (ON) position.

POL gas cylinder
informationThis gas cylinder type uses a left hand (anti-clockwise) threaded gas fitting.

  1. Inspect the valve connections, port and regulator assembly. Remove any debris and inspect the hose for damage.
  2. Make sure the oven control dial is in the OFF position.
  3. Ensure the gas cylinder valve is shut completely OFF, then screw the regulator onto the gas cylinder valve fitting until tight.

Testing for leaks

If at any time you smell gas, close the gas cylinder or regulator valve, turn the control dial on the oven to the OFF position, and extinguish any open flames.
Never check for leaks with a naked flame or attempt to ignite the burner while testing.

  1. Using a leak detector spray or a solution of dish soap and water, check for gas leaks every time you reconnect a fitting or replace the gas cylinder.
  2. Use a brush or spray bottle to apply the solution to the connections and regulator. Inspect the gas hose and apply the solution to any cracks you find.
  3. If a leak is present, the solution will bubble. If you observe a leak in the hose fitting, tighten the fitting and recheck for leaks. If the leak persists or a crack in the hose is leaking, remove the gas cylinder and do not operate the oven. If the leak is found in the oven or hose, contact Ooni support. If the leak is found in the gas cylinder valve, contact your gas supplier.

information Replacement regulators must be certified to EN16129 and hoses to EN16436, with a maximum length of 1.5m.

Disconnecting the gas cylinder

  1. Turn the gas burner control dial to the OFF position.
  2. Turn regulator valve switch to vertical (OFF) position for patio gas cylinders. Turn to close cylinder valve for POL gas cylinders.
  3. Push regulator release button under valve switch to release it from a patio gas cylinder.
  4. Unscrew the regulator in a clockwise direction for POL gas cylinder.
  5. If present, place the dust cap on the exposed gas cylinder inlet.

Lighting your oven

If the burner fails to ignite as expected, refer to the troubleshooting guide. Turn the gas off and wait 5 minutes before attempting to light again. Operate using the control dial only; never touch the outer metal surfaces or pizza stone while the oven is on.
Stand to the side when lighting. Never look directly into the mouth of the oven or at the flame. Wear heat protective gloves when using the oven and when handling particularly hot cooking apparatus.

Ignition

  1. Push and hold the control dial in while slowly rotating anti-clockwise to spark and light the gas. Once lit, continue holding for 5 seconds to maintain the flame.
  2. Verify the gas has ignited.
    1. If yes, go to step 5.
    2. If the burner does not ignite, switch to the OFF position, wait 5 minutes, then try again.
    3. If the burner does not ignite after the second attempt, switch to the OFF position, wait 5 minutes, then follow steps in Lighting the oven with the matchstick holder.
  3. If flames are ignited correctly, they should look like the illustration.
  4. If the burner is accidentally extinguished, please refer to troubleshooting.

Lighting the oven with the matchstick holder

information Never look directly into the oven when lighting; always stand to the side and wear gloves throughout.
If burner will not light after several attempts using the control dial, you may light it with a match. The supplied matchstick holder is attached to the base in front of the rear leg.

  1. If you have already attempted to light the burner using the control dial, switch to the OFF position and wait 5 minutes for any gas to dissipate.
  2. Insert a match into the matchstick holder, ignite the match and touch it to the burner through the mouth of the oven.
  3. Push in the control dial and slowly turn it to maximum. The burner should ignite immediately.
  4. Continue pushing the control dial in for 5 seconds after ignition, then release.
  5. If the burner does not light immediately or the match gets blown out, turn the control dial OFF, wait 5 minutes, and then try again.

Using the gas burner

  1. Turn the control dial to adjust the flame and temperature as needed.
    1. The gas burner is OFF.
    2. The gas burner is set to maximum flame.
    3. The gas burner is set to minimum flame.

Seasoning your oven

informationYou must season your oven before cooking in it for the first time.
informationAlways wear gloves when putting your hand inside the oven.

  1. To do this, run the oven at top temperature for 30 minutes.
  2. Turn off the oven and allow it to cool completely, then wipe down the inside with dry paper towels.

Shutting off the oven

  1. To turn off after seasoning or cooking, rotate the control dial clockwise until it stops and the flame extinguishes.
  2. Shut off the gas supply and disconnect the regulator.

Cooking in your oven

  1. Turn the burner on at full power to preheat the oven and pizza stone until it reaches your desired temperature
  2. Only cook pizza and other dry, bread-based dishes directly on the pizza stone. To cook meat, vegetables or other dishes, use the range of Ooni Cast Iron and Ooni Pans or other Ooni-approved cooking accessories.

informationNever reach into the oven to clear away food debris that has fallen onto the pizza stone. Leave it to burn out, then remove it once the oven has cooled. Refer to the pizza stone cleaning procedure in the maintenance section of this manual for additional tips.
informationWe strongly recommend using an Ooni Digital Infrared Thermometer to accurately measure the pizza stone temperature. Your pizza stone will heat up slower than the air inside the oven. (To cook great pizza, you need a balance of both.) That's why it's important to use an Ooni Digital Infrared Thermometer as well as the Digital Temperature Hub (available at ooni.com) to ensure your pizza stone and air temperatures are within a close range.

Care and maintenance instructions

Never attempt cleaning or maintenance while the oven is hot or in use.
Always wear gloves when cleaning the oven.
Do not use abrasive cleaners or scouring pads to clean any part of the oven.
Do not use chemical cleaners on painted surfaces.
Take care when cleaning inside the oven because sharp edges may be present.
Always cover oven when storing outdoors.

Cleaning the interior

  1. After each use, switch off the oven and allow it to cool completely before wiping down the inside surfaces and along the burner tube with dry paper towels.

Cleaning the exterior

informationAvoid abrasive cleaning products or those with harsh chemicals.

  1. The outer shell of the oven can be wiped down with warm, soapy water and dried immediately.
  2. For longer term storage and to maintain the look of your oven, use the Ooni Koda 2 Carry Cover which can be ordered from ooni.com. We recommend storing the oven indoors during extended periods without use.

Cleaning the pizza stone
information Never use chemical cleaners or soaps on the pizza stone. Never expose your pizza stone to water.
informationThere is no need to wash the pizza stone; it is perfectly normal for its appearance to change over time.

  1. Turn the oven on at full power for 45 minutes without cooking in it. The pizza stone will self-clean at high temperatures, and any food residue or debris will turn to ash.
  2. Allow the oven to cool completely, then brush the ash away with an Ooni Pizza Oven Brush.

informationYour oven pizza stone is symmetrical and double-sided, so you can turn it over between uses (once cool) and burn off any stubborn residue from underneath the next time you cook.

Replacing the ignition battery

  1. If you need to replace the ignition battery, refer to Installing the ignition battery section and follow the same instructions to remove the old one and install the new one.
  2. Safely dispose of the old battery.
