DEFINITION
Use speed 1 to mix slowly, combine, mash,
start all mixing processes. You can also use
this speed setting to add flour and dry
ingredients to the dough and add liquid to
the dry ingredients. Do not use Speed 1
when mixing yeast dough.
Use this speed for slow mixing, mashing
and faster mixing.
Use this speed setting to mix and knead
yeast dough, dense dough and sugar, start
mashing potatoes or other vegetables, add
fat to flour, mix thin or watery doughs.
Use this speed setting to mix semi-dense
doughs such as cookie dough, to mix sugar
and shortening, and to add sugar to the egg
white for meringue making. Medium speed
is sufficient for cake mixes.
For whipping (turning into cream) or
whipping at medium-speed, use the high-
speed setting for cake mixes to finish mixing
cakes, brioche and other doughs.
Use this speed setting to whip cream, egg
whites and boiled cake mixes.
Use this speed setting to whip a small
amount of cream or egg whites and to
smooth the mashed potatoes.
