Buffalo wings

Roast/indirect medium heat 190 - 230°C
10 mins prep - 35 mins cook
Serves: 6
Ingredients
2 kg chicken wings, tips removed
1 cup rice flour
½ tsp fine salt
¼ tsp freshly ground black pepper
For the hot sauce
6 tbsp hot sauce (e.g. Frank's RedHot sauce)
6 tbsp butter
1½ tbsp white vinegar
¼ tsp cayenne pepper
⅛ tsp garlic powder
1 tsp Worcestershire sauce
1 tsp Tabasco sauce
¼ tsp salt
For the blue cheese sauce
75 g sour cream
65 g mayonnaise
80 g blue cheese
1 tsp white vinegar
1 garlic clove crushed
Celery sticks to serve
Method
Preheat the barbecue for indirect cooking.
Place chicken wings in a plastic bag with the rice
flour, salt and pepper. Shake until well coated.
Once the barbecue has preheated, turn burner
2 OFF and burners 1 and 3 down TWO NOTCHES
LESS THAN HIGH (HIGH -2) .
Shake the excess flour off the chicken wings
and place them in the centre of the barbecue
ensuring a small gap is left between each piece
so the heat can circulate evenly around them.
Continue to roast the wings for a further 30 to
35 minutes or until cooked through. There is no
need to turn them during the cooking time.
While the wings are cooking, mix all the blue
cheese sauce ingredients together in a small
bowl. Microwave briefly until just warmed
through.
Five minutes before the wings are cooked,
combine the hot sauce ingredients in a small
saucepan. Heat the hot sauce on the stove top or
side burner over low heat. Cook until the butter
has completely melted and the sauce has just
started to bubble gently.
Once the wings are cooked, coat in the hot sauce
and serve immediately with the blue cheese
sauce and celery sticks.

Roast chicken wings

Ingredients
1 kg chicken wings, tips removed
3 tbsp olive oil
½ tsp salt
½ tsp freshly ground black pepper
Method
Preheat the barbecue for indirect cooking.
Remove the wings from the fridge while the
barbecue is preheating.
Coat the wings with oil and season with salt and
pepper.
Once the barbecue has preheated, turn burner
2 OFF and burners 1 and 3 down TWO NOTCHES
LESS THAN HIGH (HIGH -2) .
Place the wings in the centre of the barbecue,
ensuring a small gap is left between each piece
so the heat can circulate around them.
Close the lid and roast the wings for 20 to 30
minutes or until cooked through. There is no
need to turn them during the cooking time.
