DO NOT THROW AWAY THESE INSTRUCTIONS

DESCRIPTION OF THE APPLIANCE (Fig. 1)

Overview

  1. Cap
  2. Transparent lid
  3. Lid
  4. Yoghurt container
  5. Power base
  6. Operation selector dial
  7. Ice cream container
  8. Mixer

This appliance is extremely easy to use and can make over 1 kilo of thick, creamy and fresh yoghurt, as well as tasty, wholesome ice cream or fruit sorbets, all in a single appliance.

Always make sure that the appliance is switched off and unplugged before assembling, disassembling or cleaning.

Before using the appliance, it is advisable to wash all removable parts (ice cream container, yoghurt container and mixer) and the transparent lid with water and a normal washing up detergent.

USING THE APPLIANCE AS A YOGHURT MAKER

MILK: The maximum amount of milk to be used is 1.20 litres. Any type of milk is suitable (although full fat or "high quality" milk is preferable), but it needs to be pasteurised so that the probiotic yoghurt cultures can develop without being damaged by other bacteria normally present in fresh milk. The best and simplest method is to use UHT milk, as it is already pasteurised and ready for use. It is also possible to use fresh milk, but it needs to be pasteurised before preparing the yoghurt: after placing the milk in a saucepan, heat it to a temperature of 90°C (check with a kitchen thermometer or alternatively, heat the milk to pre-boiling point, when it starts to "move"), then lower the heat and simmer for 15 minutes. Leave to cool until it is lukewarm (40°C), taking care to remove the layer of "skin" that will form on the top.

PROBIOTIC CULTURES: Whether using UHT milk or fresh pasteurised milk, the yoghurt will only reach the right consistency after the fermenting process has begun, which requires the addition of probiotic cultures (known as live lactobacillus bulgaricus) to the milk. To make the first batch of yoghurt, or in any case, whenever ready-made yoghurt is used to prepare the recipe, it is fundamentally important for it to contain live lactobacillus bulgaricus. It is also important to make sure that the use-by date is as far off as possible, since as the use-by date approaches, the number of probiotic cultures contained in the yoghurt will fall.

PREPARATION

  • Pour the milk into the container (D) and add a carton (125 g) of ready-made natural yoghurt or the same amount of yoghurt prepared using the appliance. It is possible to add a teaspoon of powdered milk to make the yoghurt creamier and thicker.
  • Mix well to remove any lumps and to make sure that the yoghurt is perfectly dissolved in the milk.
  • Add the other ingredients, according to the chosen recipe and close the lid (C). Place the container so it fits perfectly over the ring nut on the power base (E) making sure that it is stably in place (Fig. 2).
    Yoghurt Preparation - Step 1
  • Fit the transparent lid (B), so that the tabs fit perfectly into the slots on the power base (E) (Fig. 3). Plug the appliance into the mains power and set the dial (F) to the "yoghurt" setting. The appliance will start to operate.
    Yoghurt Preparation - Step 2
  • Leave for 12 hours (for example, from 8 p.m. to 8 a.m. the next day).
  • After the necessary time, switch off the appliance at the dial (F), unplug it from the mains electricity, remove the transparent lid (B) and take out the container (D). Close the container with the special lid and place it in the refrigerator until it is completely chilled: the yoghurt will be ready to eat within 2 hours.

During this stage, the yoghurt maker must be left in a safe place without moving, knocking, or shaking it.

THE YOGHURT MAKER ALSO NEEDS TO STAND ON AN INSULATED TOP (never place it on metal or marble tops, floors or tiled surfaces).

HELPFUL HINTS

  • It may occur that the first batch of prepared yoghurt is too runny; this may depend on the low activity of the probiotic cultures in the bought yoghurt. If this problem occurs, unplug the appliance and leave it to cool. Plug in the appliance again and leave the yoghurt for another cycle of approximately 6 hours.
  • The expiry period for home-made yoghurt will vary according to the freshness of the main ingredients and to its storage. It is advisable, in any case, to use the yoghurt within one week.

USING THE APPLIANCE AS AN ICE CREAM MAKER

  • The ice cream container (G) must be frozen before each use: the container has double insulation and needs to be completely frozen (approximately 12 hours) for perfect ice cream. Place the ice cream container in the back part of the freezer, where it is coldest (the freezer used needs to reach a temperature of at least - 18°C). The container needs to be placed, preferably closed, inside a plastic bag to prevent it from absorbing odours and from contact with ice, so that it is upright, with the opening at the top. We recommend storing the container in the freezer when not in use, so that it is ready at all times.
  • Prepare the ingredients according to the chosen recipe in a large container. The recipe needs to be allowed to cool to room temperature before it can be placed in the ice cream maker.
  • Remove the container (G) from the freezer and place it on the power base (E), taking care to use it immediately after removing it from the freezer since it will begin to defrost straight away (Fig. 4).
Making Ice Cream - Step 1
  • Place the mixer paddle (H) inside the container (G) so that the circular part is facing upwards (Fig. 5).
Making Ice Cream - Step 2
  • Fit the transparent lid (B) correctly over the power base so that the mixer (H) is properly inserted in the housing inside the top part of the lid and the lid closes perfectly so that the tabs fit perfectly into the slots on the power base (E) (Fig. 6).
Making Ice Cream - Step 3
Plug the appliance into the mains power and set the dial (F) to the "ice cream" setting.
  • Pour the prepared mixture in through the opening in the top of the lid. Close the lid with the special cap (A), turning it to lock it into position (Fig. 7). Only fill the container up to approximately 2.5 cm from the top or less (the volume of the mixture will increase when it freezes).
Making Ice Cream - Step 4
  • Leave the machine to operate for a maximum of 30-40 minutes, or until the mixture has reached the required consistency. Ice cream needs to have the consistency of soft cream sauce (for thicker ice cream, remove the mix from the container and place in an airtight freezer container. Leave in the freezer for a short amount of time only – no more than 30 minutes).
  • It is possible to add other ingredients (chocolate flakes, nuts, caramel) by pouring them through the special opening in the top of the lid during the final 5 minutes of the freezing process.
  • When the mix has reached the required thickness, switch off the appliance using the dial (F), remove the transparent lid (B) and use a spatula or plastic spoon to remove the ice cream.
Making Ice Cream - Step 5

AWAYS START THE APPLIANCE BEFORE ADDING THE ICE CREAM OR SORBET; THIS IS TO STOP THE MIX FROM IMMEDIATELY FREEZING INSIDE THE CONTAINER.

Never stop and then restart the appliance during the freezing process, since this could bring the mix to freeze as it enters into contact with the container and prevent the mixer paddle from moving.

Never use metal utensils or items inside the container since this could damage the surface.

HELPFUL HINTS

  • The most common ingredients for ice cream are cream, sugar, eggs and milk. It is possible to use other substitute ingredients, although the higher the fat percentage in the ice cream, the richer and softer it will be.
  • Adding an egg white will increase the volume of the mix.
  • If it is to be stored in the freezer for any length of time, homemade ice cream should only be placed inside airtight containers. Do not keep prepared ice cream inside the appliance container for more than 2 days.
  • The mixture should be liquid at the start of preparation. Never use hard or frozen ingredients inside the mixture.
  • Adding alcohol to the mixture will prevent it from freezing.

APPLIANCE CLEANING AND MAINTENANCE

  • The container (D) needs to be carefully washed before it can be used to make yoghurt. Any residues on the lids or pots, such as detergent, rinse aid, old yoghurt, etc., will affect the success of the recipe. Perfectly clean equipment is a guarantee of the best results in terms of the production and quality of the yoghurt.
  • Wash the lid (B), the mixer (H) and the ice cream container (G) in warm, soapy water.
  • Wipe the power base (E) with a damp sponge or cloth.

Never clean with abrasive or metal equipment. Rinse and dry all parts with care.

Never start the freezing process if the container is still wet.

Never store the plastic parts inside the refrigerator.

To extend the life of your appliance, never wash the parts in the dishwasher.
