Operation Responsive, Reliable Solutions Operation 5.1 Morning Startup 5.1.1 Grease Drip Pans Installation ® The interior of the Elemendt 1000 features 2 removable grease drip pans that guide grease accumulation towards the drain. This minimizes grease buildup directly on the floor pan and makes cleaning easy! Before each cook cycle, ensure that both grease drip pans are clean and properly installed as outlined below.

Operation Responsive, Reliable Solutions 5.1.2 Drive Assembly Installation ® The Elemendt 1000 features a removable drive assembly, both simplifying its own cleanability as well as that of the oven’s cavity! Drive Before each cook cycle, ensure that drive assembly is properly installed as outlined below.
5.1.3 Grease Collection Hardt offers an optional grease collection reservoir (GR-15) that is used to facilitate the collection and disposal of grease from the rotisserie. If no reservoir is obtained from Hardt, alternate methods of grease collection and disposal are required.

Operation Responsive, Reliable Solutions For models with a Programmable Controller, see Section 5.4.2 Programmable Controller for information on how to store quick key programs and other feature details. 5.1.4 Starting the Rotisserie 1. If applicable, turn on the ventilation system before starting the rotisserie.
Refer to Table 1: Safe Cooking Times and Temperatures on page 6 for a list of minimum safe cooking temperatures and times. The procedures described here are basic. Hardt provides extensive cooking and food program support and training. Your organization may have specific instructions that should be followed instead of the ones listed here.

HARDT 5. Operation Responsive, Reliable Solutions 6. If the measured internal temperature is insufficient, add 5 minutes to the cooking cycle: Manual Controls • Set the timer dial for 5 minutes. Programmable Controller • Press the manual cook button to add 5 minutes (to any cook cycle).
HARDT 5. Operation Responsive, Reliable Solutions 5.3 Loading and Unloading the Rotisserie CROSS CONTAMINATION OF RAW ONTO COOKED PRODUCT IS VERY DANGEROUS. DO NOT LOAD UNCOOKED PRODUCT INTO THE ROTISSERIE UNTIL COOKING CYCLE IS COMPLETE AND ALL COOKED PRODUCT IS REMOVED FROM THE ROTISSERIE.
HARDT 5. Operation Responsive, Reliable Solutions 5.3.2 Unloading the Skewers USE PROTECTIVE CLOTHING WHEN LOADING AND UNLOADING THE ROTISSERIE. Follow these steps to properly unload skewers out of the rotisserie. (For simplicity, “left” and “right” refers to loading skewers into a front load model).
HARDT 5. Operation Responsive, Reliable Solutions 5.4 Special Functions 5.4.1 Notifications and alarms At the end of a Preheat: On a manual control rotisserie, the alarm sounds continuously until either: • The door is opened to load product & start a cook cycle.
• Temperature and Time can be adjusted at any time during a cook cycle. • Although a manual cook does not require a Preheat cycle to be performed, Hardt recommends running a Preheat cycle for safe and optimal oven performance.
HARDT 6. Maintenance Responsive, Reliable Solutions Maintenance ENSURE YOU ARE WEARING INSULATED GLOVES AND AN APRON AT ALL TIMES WHEN WORKING WITH THE HOT ROTISSERIE. Allow a period of time for the rotisserie to reach a safe-to-touch temperature, but ensure that the oven is still warm to facilitate easier cleaning.

HARDT 6. Maintenance Responsive, Reliable Solutions 6.1.4 Special Cleaning 6.1.4.1 Convection Duct Cleaning It is important to clean the convection fan area & the back wall ducting every 4 months (the areas behind the removable fan & back panels – See Figure 6-2).

Maintenance Responsive, Reliable Solutions 6.1.4.2 Halogen Lamp Shield Cleaning In order to maintain sufficient oven brightness, thoroughly clean the halogen lamp glass shield every 4 months. 1. Turn the rotisserie OFF before proceeding (push in main ON/OFF red switch) and allow a period of time for the rotisserie to reach a safe-to-touch temperature.
HARDT 6. Maintenance Responsive, Reliable Solutions 6.1.5 Clean Effectiveness Evaluation It is important to consider the condition of the rotisserie to verify that the cleaning operations are done correctly. The following images illustrate two states of cleanliness and their related interpretation.
Responsive, Reliable Solutions 6.2 Weekly Inspection Thoroughly inspect the components supplied with the rotisserie for signs of damage (dents, perforations, etc.). Replace with certified Hardt components if required. Ensure that the electrical cord is free from damages and kinks. 6.3 Material Cleaning Guidelines 6.3.1 Guidelines for Cleaning Glass Surfaces...
HARDT 6. Maintenance Responsive, Reliable Solutions 6.3.3 Guidelines for Porcelain Enamel Surfaces • Wipe off residues with a soft cloth or a paper towel. • Remove baked-on residues using a wooden or plastic scraper. Avoid using a metal scraper as it may scratch the enamel surface.
HARDT 7. Troubleshooting Responsive, Reliable Solutions Troubleshooting SERVICE/REPAIRS SHOULD ONLY BE PERFORMED BY TRAINED PERSONNEL. DISCONNECT POWER TO THE ROTISSERIE BEFORE ANY MAINTENANCE, SERVICE OR CLEANING IS PERFORMED. THE ROTISSERIE IS HOT WHEN OPERATING. EXERCISE CAUTION WHEN WORKING NEAR THE HOT ROTISSERIE.
HARDT 7. Troubleshooting Responsive, Reliable Solutions 7.3 Skewer(s) Falls Out of Position during Normal Operation If a properly inserted skewer falls out during a cooking cycle, this may indicate that the drive plates have deformed slightly. Solution 1. Ensure that the oven cavity of the rotisserie is cool to the Slide skewer to left touch.
HARDT 7. Troubleshooting Responsive, Reliable Solutions 7.4 Replacing the Halogen Lamp 1. Turn the rotisserie OFF (push in main ON/OFF red switch) and disconnect power to the rotisserie before proceeding. Allow a period of time for the rotisserie to reach a safe-to-touch temperature.

Troubleshooting Responsive, Reliable Solutions 7.5 Grease Reservoir GR-15 Not Readily Emptying The GR-15 is equipped with a removable baffle (see Figure 7-7) designed to contain liquid grease while the unit is being moved. When tilting the unit for emptying, liquid grease will flow freely around this baffle and out of the reservoir.
