What is dry mode used for and do I have to dismantle air exhaust duct?

The purpose of Dry Mode on the SereneLife SLPAC805W is to dehumidify the air. It operates the compressor when the ambient temperature is ≥17°C (62°F) and stops it when the temperature drops to ≤15°C (59°F).

It is not necessary to dismantle the air exhaust duct for Dry Mode. Instead, you need to remove the water plug and connect a drainage hose to allow water to drain into a tank or channel.
