Baking recipes
Bacon or herb baguettes
Serves approx. 20
250 g strong white flour
250 g strong wholemeal flour
1 x 7g sachet fast action dried yeast
1 tsp sugar
2 tsp salt
1/2 tsp pepper
3 tbsp oil
250 ml lukewarm water
150 g finely diced grilled bacon
or
1 tbsp each of chopped parsley, dill
and chives
For glazing:
2–3 tbsp milk
1 egg yolk
Method
1. Mix the flours, yeast, sugar, salt,
pepper, oil and water to a smooth
dough. Knead in the bacon or herbs.
2. Place the dough in the oven at 50 °C
and leave to prove for approx. 40
minutes, then knead again briefly.
3. Punch down, then divide the dough
in half, and roll into two 30 cm long
loaves.
4. Beat together the milk and egg yolk
and brush over the two loaves. Leave to
prove for a further 20 minutes in the
oven at 50 °C then bake until golden.

Tip: 12 rolls can be made instead of
the baguettes. Cut a cross in the top of
each, and brush with beaten egg yolk.
Bake until golden.
