Citrus syrup cake with cream cheese
frosting
makes 10-12 serves
200g lemons
200g oranges
150g butter, softened
3 x 60g eggs
1 cup caster sugar
2 cups/300g self raising flour
½ cup desiccated coconut
Citrus syrup:
1 cup/250ml orange juice
1 cup caster sugar
Zest of 1 orange
Cream cheese frosting:
250g cream cheese, softened
1½ cups icing sugar, sifted

Assemble the Wizz™ Food Processor using
food processor bowl and insert the
processing blade.

Cut whole unpeeled orange and lemon into
quarters (remove any pips) and place in food
processor bowl. Process using low-range
speed until finely chopped.

Add in remaining ingredients and process
using low-range speed until combined.
Do not over process.

Spoon mixture into greased and lined 0cm
round spring form cake tin. Clean the food
processor bowl and the dual processing blade.

Bake in a preheated oven at 160ºC for 50-60
minutes. It may be necessary to cover with foil
halfway through cooking time is cake is over
browning. Remove from oven and allow to cool
slightly in cake tin.

Meanwhile, in a small saucepan heat orange
juice and sugar until sugar is dissolved. Bring
to the boil, then reduce and simmer over low
heat until mixture becomes thick and syrupy.
Remove from heat and stir in half the orange
zest (reserve remaining zest for frosting).

Pour syrup over warm cake and allow to stand
for 30 minutes. After standing, remove from
cake tin and cool completely on a wire rack.

Meanwhile, reassemble the Wizz™ Food
Processor using food processor bowl and
insert the processing blade.
9.
Place softened cream cheese, icing sugar and
remaining orange zest into food processor
bowl and process using mid-range speed until
smooth. Do not over process. Ice cooked cake
with cream cheese frosting.
