Chilled lemon cheesecake with
Raspberry Puree
makes 6 serves
200g pkt plain sweet biscuits, broken into quarters
125g butter, melted
250g cream cheese, cubed and softened
400g can sweetened condensed milk
½ cup/125ml cream
2 teaspoons lemon zest
2 tablespoons lemon juice
Raspberry Puree:
1 punnet raspberries, for serving
1 tablespoon icing sugar, optional

Assemble the Wizz™ Food Processor using the
food processor bowl and insert the processing
blade.

Place the broken biscuits into the food
processor bowl. Process until finely crushed
using high-range speed or PULSE. With the
motor running using low-range speed, slowly
add the melted butter through the food chute.
Process until combined.

Remove mixture from processing bowl and
press over the base and up the side of a lightly
greased 0cm spring-form pan. Cover and chill
until firm.

Reassemble the Wizz™ Food Processor using
the clean food processor bowl and insert the
clean processing blade.

Place cream cheese, condensed milk, cream,
lemon zest and juice into food processor
bowl. Process using mid-range speed until
thickened. Do not over process.
6.
Pour mixture into prepared biscuit crumb base,
cover and refrigerate for at least  hours
before serving.
7.
Reassemble the Wizz™ Food Processor using
food processor bowl and insert processing blade.
Place raspberries into processing bowl. Process
using high-range speed until pureed. If desired
sweeten raspberry puree with icing sugar.

Allow cream cheese to soften at room
temperature.
