USING THE INDIRECT PAN

Before starting up the pan, remove the clamp under the knob (K Fig. 6) of the
relief valve that keeps it locked, this is to make certain no scale has caused
locking of valve.
Ignite the pan burner only after filling the gap of the pan and the pan itself.
To fill the gap, first open the level cock, (7 Fig. 2), then open the gap filling
cock (8 Fig. 2); leaving it open until water starts flowing out of the level cock
(7 Fig. 2) (for the content of the gap up to the level, refer to point 1.1).
Now shut off the filling cock (8 Fig. 2) and the level cock (7 Fig. 2), the gap is
now quite full.
CAUTION!!!
Use only water with a maximum hardness of 10° French for the gap.
Now fill the pan with cooking water by opening either of the hot or cold water
cocks (4 or 5 Fig. 2) to reach the level marked on the pan (including the food to
cook).
Now ignite the burner as directed in point 5.3 and heat the water in the gap up
to a temperature of over 100°C (read off the thermometer 9 fig. 2).
When a pressure in the gap of 0.5 bars is reached (shown on the pressure gauge
N of the relief valve), it starts breathing to decrease the pressure in the gap when
the pan starts to boil, turn control setting to low flame, this will also reduce
pressure setting on gauge.
- Before cooking each time check the level of water in the gap and top it up
if no water comes out of the level cock (7 fig. 2), the gap is now quite full..
- Never use coarse salt since, depositing on the bottom of the pan and being
too heavy to be carried in circulation, it would not be able to dissolve fully.
In the long run, undissolved salt can cause corrosion at contact points.
It is therefore recommended to put small grains of salt (less than 3 mm.) into the
pan after the water starts boiling.
If this is not possible and there is coarse grained salt to be dissolved, do this
using hot water in a separate container.
IMPORTANT!!! Never tamper with the pan safety devices (valve fig. 1) and at
least every 6 months have their efficiency checked by trained personnel.
