This ANETS CF14 Fryer is designed for operation with a kettle filled with approximately 30 pounds of liquid shortening. Solid shortening must be melted into the liquid state before it can be used in an ANETS Fryer.

Once each month, before beginning fryer opera- tion, check the flue (behind the backsplash panel) to ensure that it is clear, enabling exhaust combus- tion gases to flow freely toward the ventilation hood area.
