Tips for cooking preserves
Use only fresh food, prepared according to the usual reci-
pes. Cook a maximum of eight 1-1.5 litre preserve jars. Use
only jars suitable for the purpose, all with the same height
and capacity. The jars must stay perfectly still.
Fruit preserves
Cooking with hot air
Place the dripping pan in the first groove from the bottom.
Pour about 1-2 litres of water into the dripping pan.
Set the hot air at 180°C. Check the cooking time. After about
40-60 minutes, the liquid in the first jars - especially at front
right - should start to boil.
Switch off the oven and leave the jars in it for 30 minutes
more (15 mins. for particularly delicate fruit, such as straw-
berries).
Vegetables and meat
When the liquid starts to boil, turn the temperature down to
150°C and continue cooking for another 30-60 minutes.
Then switch off the oven and leave the jars in it for 30 minu-
tes more.
