www.stefanoferraraforni.it 7) Burner installation 7.1 Temperature probe The electronic unit control comes fixed to the oven support stand, from the unit control run the electrical cables and temperature probe. The temperature probe “A” is inserted in a copper tube “B” . Insert the probe through the copper tube placed under the oven until getting in the cooking room to a height of around 1 cm (0.40 in).

The user is in charge of ensuring the connection characteristics required. ELECTRICAL CONNECTION The burner works at 230 Volt, 50-60 Hertz.

www.stefanoferraraforni.it OVEN VENTING The venting system of our ovens is to direct connection, exploiting the natural draught. The oven employs an integral exhaust hood above the front opening. All flue gases exit the front opening and drafts into the exhaust hood to be subsequently expelled through a flue pipe (250 mm / 10” in O.D.) located at the top of the oven.
www.stefanoferraraforni.it OVEN CARE DURING FIRST FIRES As the oven has just been built, it is still damp and the mortar full of water which needs to dry out. Therefore, it cannot be used immediately for baking but it needs a period of drying out. This can be achieved with one week (around 8 hours daily) of keeping medium fires just to let it dry and at the same time "cook"...

At any way in case of use of wood make sure to place the steel cap on the hole where the burner flame comes out for protection of the burner and to preserve it from deposits of the wood combustion .

Allow the oven to get completely cool before inspecting the vent and chimney pipe for creosote build up. Creosote – Formation and need for removal. When oven is often used with wood soot is produced. When wood is burned slowly, it produces tar and other organic vapors that combine with expelled moisture to form creosote.

The control unit automatically turns on the flame, the flame of the burner during the first phase has the function of heating the oven and maintaining its temperature.

www.stefanoferraraforni.it FIRST IGNITION AND ADJUSTMENT Prior to switching on the burner, make sure the oven opening is open. The oven door must always be opened before switching on the burner, and it must stay completely open for the entire time the burner is switched on. It cannot be closed, even partially, until the burner is on. Make sure that all gas taps fitted on the system are open.
www.stefanoferraraforni.it BURNER UNLOCK Burner release via “RESET” button To unlock the burner, the procedure is as follows: 1 - Check that the green light of the ON-OFF button is on 2 - Press the “RESET” button. Wait approximately 1 minute for the cycle to restart. If the problem persists, vent the gas pipe and then repeat the unlock procedure.

FLAME (F1) The F1 Flame is always “ON” when the burner is working, and it carries out two functions only: • cook pizzas in a preheated oven, • lighting up the inside of the cooking chamber. Flame F1 DOES NOT have to heat up the oven, as it is a “maintenance”...
www.stefanoferraraforni.it AIR ADJUSTMENT 1st FLAME (F1) The function of the first burner flame is not to heat up the oven, as it is a maintenance flame; its task is to prevent the oven from cooling down too much and to light up the cooking chamber. Primary air is not only subject to the adjustment of the gate, but also to the chimney draught and the gas pressure.

SETTING THE SAFETY LIMIT TEMPERATURE The safety limit temperature is a set value of maximum temperature that, when reached and measured inside the oven, completely shuts off the burner.
