:Rotisserie spit
T he rotary spit is particularly good for cooking large
R o t i s s e r i e s p i t
roasts, such as rolled roasting joints or poultry. The
meat becomes crispy and brown.

Preparing roasts

To ensure that the roast is well-browned and cooked
evenly, observe the following points:
Skewering and securing the meat to the spit
Position the roast as close as possible to the centre of
the rotary spit.
Use the clamps to secure the roast at both ends. The
rear clamp must be a minimum of 7 cm from the end of
the spit.
You may also use cooking string to bind and secure the
roast. When spit roasting poultry, bind the ends of the
wings underneath the back and secure the thighs to the
body. This prevents them from overbrowning. Pierce the
skin on the underside of the wings to allow the fat to
escape.

Select the appropriate oven temperature from the
information given in the table. If the temperature is too
high, the meat or poultry will burn on the outside, while
inside it will remain largely uncooked.
