    Positioning racks and pans For baking/roasting with one rack the rack should be placed so the top of the food will be centered in the oven. Always leave at least 1 l/z to 2 inches (4-5 cm) between the sides of the pan and the oven walls and other pans.

    Using aluminum Use aluminum foil to catch spillovers from pies or casseroles. Place the foil on the oven rack below the rack with the food. The foil should have the edges turned up and be about 1 inch (3 cm) larger all around than the dish holding the food.
