Gelado de Chocolate
Ingredientes:
• 300 ml. de leite
• 1 gema
• 70 gr. de açúcar
• 1 barrita de chocolate
• 1 colher de sopa de fécula de milho
• 1 colher de chá de essência de baunilha
• 20 gr. de banha
• 1 clara
Colocar numa panela as gemas, açúcar e fécula, bater durante 10 minutos, até que
a preparação fique bem espumosa, entretanto ferver o leite com o chocolate ralado,
retirar do lume e deixar amornar, verter devagar sobre as gemas e açúcar, misturar
bem, levar a lume brando e cozinhar mexendo constantemente até que engrosse,
retirando antes de ferver. Adicionar então a banha cortada em pedacinhos, mexer
até dissolver, aromatizar com baunilha e deixar arrefecer. Finalmente, adicionar
as claras batidas em castelo com uma pitada de sal, misturar cuidadosamente ao
creme de chocolate e verter na máquina até que tome ponto de gelado.
