Temp Hold is an especially handy feature of
your microwaveoven. It lets you hoid foods at
serving temperature, keeping them "j@-
cooked" hot and fresh.
With the TempHold feature:
1. You can selecta holdingtemperature be-
tween90° and200°F.
2. Youcan seiectanyPowerLevelyouwant.
Becausefoods tend to stay moist and tender
during microwaving,7'empHold is the perfect
wayto keep vegetables,casseroles,and even
scrambled eggs piping hot and ready to
serve. Roasts, ham and poultry, too, may be
keptjuicy and table readywith this feature.

If you want, you can set your ovento automat-
ically defrost, hold, time or temperaturecook,
and then Temp Hold. You must be sure, when
you time cook, that the temperature probe is
placed in the food before starting the micro-
waveoven.
Temp Hold keeps a pre-settemperature Ievei
inside the food for as iong as you like. If your
oven does not have an automatic simmerset-
ting, you can achievethe same' f lavorful, slow-
cooked tenderness by setting the Temp Hold
cycle to 180° and medium (5) power Ievei.
Use the automatic s$mmerrecipes from your
cookbook.
Things to remember when setting
your oven to microwave
Temp HokL
To preventspoilage,do not holdfoodsex-
cept solid roasts at temperaturesbelow

Soiid(not roiied)roastsmaybe heid beiow

hours.
However, during the microwave roasting
process, a great amount of heat is stored in
the roast, Keeping the roast in the warm
oven cavity during TEIVIP/HOLDcan cause
a greater increase in internai temperature
than when aliowing the roast to stand out-
side the ovenon a kitchen counter. Temper-
aturesof up to 20° to 30° abovethe TiWIP/
HOLD setting are possibie. Becauseof this
heat storage,it is not possibleto hold roasts
at a raredegreeof doneness.
It is suggestedthat you first removethe roast
from the oven and let it stand, uncovered, for
about 10 to 15 minutes before returning to
TENIP/HOLD.Or, if you know before cooking
that you intend to hold a soiid roastat serving
temperature, you may compensate for the
stored heat by undercooking the roast. See
your Cookbookfor details.
