CASSEROLES
For best results when reheating prepared casseroles, be sure they are completely thawed before cooking and
removed from metal pan to a suitable container for use in your Microwave Oven. These then can be used on a
steam table. Here are a few guidelines to follow in casserole preparation.
1. In preparing your own casseroles or reheating a purchased product, place greatest bulk and largest pieces of
food around the edges of the container. Do not overfill casserole or cooking dish.
2. Cover all casseroles with plate cover, lid, plastic wrap, or other suitable non-metallic material. If plastic wrap is
used, puncture or leave an open area so steam can escape.
3. Allow for heat transfer at the end of the cooking period. If possible, stir the casserole at the end of the cooking
period.
4. Add all garnishes and special toppings after heating.

COOKING FISH
For best results: All fish or seafood items should be defrosted and cooked covered. After defrosting, brush fish with
butter or margarine, inside and out, if applicable, then season. Turn fish around half way through cooking time, if
possible. Do not overcook.

Recipe should be fairly loose. Plated product should be
no higher than 1½-2 inches.
Place cabbage rolls at each end of plate, leaving center
separated. Mask with sauce, cover and heat.
Distribute sauce evenly, cover and heat.

After defrosting, split tail lengthwise and lift meat over
the shell. Brush with butter and cover. Rotate product
quarter-turn half way through cooking time.

Keep leftover prime rib in the cooler. Slice only when
ordered. Pour on au jus, cover and heat.
Thinly slice beef when cold. Arrange overlapping slices.
Moisten with au jus, cover and heat.
Cut into edges of ham slice to prevent curling, moisten
with sauce, cover and heat.
