Steamed Salmon with Mango Salsa

Serves: 4
Ingredients:
4 salmon fillets each 4-6 oz (100-150 g)
Marinade:

Mango salsa:

Method:
Mix the marinade ingredients together.
Pour marinade over salmon in a
shallow dish and leave to marinate
for 2-3 hours in refrigerator. Fill Water
Tank. Mix all the salsa ingredients
together and chill in refrigerator. Place
salmon in a 2-quart dish and cook at P6
for 4 minutes. Rotate halfway. Continue
cooking on Microwave with Steam for
12-15 minutes. Serve salmon with the
salsa.

Serves: 4
Ingredients:

can stewed tomatoes,
chopped
3 oz (80 g)
can sliced
mushrooms, drained

cup (60 ml)
white wine

Method:
In a shallow dish, combine onion, butter
and garlic. Cover with plastic wrap.
Cook at P7 for 3-3

minutes. Stir in

tomatoes, mushrooms, wine and basil.
Cover, Cook at P7 for 3 minutes, and at
P4 for 3-4 minutes, stir once.
Meanwhile, season fish with salt, skin
side only. Roll up (skin-side in) and
arrange seam-side down in sauce,
spoon sauce over fish. Cover, Cook at
P7 for 5-7 minutes, or until fish is done.
Let stand, covered, 5 minutes before
serving.
