Programming the coffee grinder
A good espresso with a thick, even foam depends
not only on the quality, pressure and temperature of
the water and the quality of the coffee beans, but
also on the quantity of beans and how finely they
are ground.
The foam should have an even color with dark
stripes running through it.
To prevent machine damage, the slide control for
the coffee grinder setting should be moved care-
fully and in small adjustments.
There are various ways to tell whether the coffee
grinder is set correctly:
– If the espresso flows too quickly into the cup, the
coffee has been ground too coarsely and the
pressure is not sufficient. The grinder should be
adjusted to a finer setting.
– If the espresso only trickles into the cup, the
beans have been ground too fine and the coffee
will be bitter. The grinder should be adjusted to a
coarser setting.
– If the foam is evenly colored but pale, this is also
a sign that the ground coffee is too coarse.
– If the foam is very dark brown on one side, grad-
uating almost to white on the other, it suggests
that the ground coffee is too fine.
