CONVENTIONAL ROASTING For best results, a shallow pan close to the size of the meat is recommended. The broiler pan can be used if necessary. Place the meat on a rack or grid with the fatty side up. Do not cover or add water. Place the pan on the oven rack with the center of the meat in the center of the oven.
