Suggested Fillings for Crepes
• There are as many filling for crepes as there are fruits and
chocolates. Pie fillings and jams make the quickest and
easiest fillings for sweet crepes. Powdered sugar is a great
addition to any sweet crepe.
Savory crepes can be filled with grated cheeses, tuna salad
mixture, chicken salad. Here are some suggestions I found
on-line:
• Fill them with wilted greens, roasted peppers, goat cheese
and toasted pine nuts. Braised meats and roasted root
vegetables. Blue cheese, honey, walnuts and sliced pears.
Smoked fish, sour cream, chives and horseradish. Sauteed
shrimp, fennel and shaved parm. Mushrooms, white beans
and sausage.
• Spinach and mushrooms are good, as are blintz cheese filling
(cottage cheese and sour cream usually).
• And for dessert, you can fill them with dulce de leche/cajeta,
which is nothing more than cooked sweetened consdensed
milk. Too delicious for words... and
Nutella and strawberries are a Saturday staple at l'Alliance
Francaise in Puerto Rico.
• Ohhhhh - I love to fill crepes with spinach sauteed with some
onions, cheese, walnuts and topped with a healthy drizzle of
honey. They're just too good...
• My favorite is smoked salmon and arugula, with a dill and
lemon cream cheese
• I like a ricotta and sour cream filling mixture topped with

fruit especially strawberries or blueberries.

Basic Pancake Mix
Here is a basic pancake recipe that can be used just like a store
bought pancake mix. It will make 14 to 16 pancakes.
Ingredients:

2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
2 eggs

Preparation:
1. In a large bowl, combine dry ingredients with wire whisk.
2. In a small bowl, with an electric mixer, combine eggs, milk
and oil. Slowly add wet ingredients to dry ingredients. Hand
whisk only until large lumps are gone.
3. Preheat your pancake maker until the red indicator light
turns on, approximately two minutes.

perfectly cooked in this time. For browner pancakes, cook
one minute longer.
