REPLACING CYCLING THERMOSTAT

1. Remove screws securing pivotal head (located above fry tank). Remove pivotal head cover and gasket.
2. Remove fry baskets.
3. Grasp the black handle on pivotal head above fry tank and swing it to the left of the fryer until it stops. Use
caution; the pivotal head may be hot.
4. Remove the crumb tray.
5. Firmly grasp both handles of the fry tank and lift it out.
6. Remove cycling thermostat bulb and capillary tube clamps from support rod located below pivotal head.
7. Dislodge the capillary bushing from hole on side of pivotal head.
8. Remove rear cover of fryer by removing "U" bolt clamped to the gas inlet pipe, removing the strain relief
bushing located where electrical supply cord passes through rear cover, removing the 10 sheet metal
screws fastening the rear cover to the fryer, and removing the rear cover.
9. Remove the three sheet metal screws holding pivot post (located on pivot arm at the opposite end of
pivotal head). One of the screws also secures one end of the thermostat coil (moving end) with a Tinnerman
Nut. Mark the screw and the pivot post hold through which it is mounted for identification.
10. Remove the other end of thermostat coil (fixed end) from the sheet metal bracket behind the pivot post.
11. Pull the entire pivotal head and pivot post assembly toward the front of the fryer.
12. Thread the thermostat bulb and capillary through pivotal head and pivot post assembly. Then thread the
bulb, capillary, and thermostat coil through pivot ring weldment. Straighten out the coiled portion of
thermostat capillary.
13. Open front panel. Remove control knob by grasping the outer edge of the knobs and pulling them straight
out without twisting or turning. Turn quick connect fasteners
edge of the front panel to open.
14. Remove the three screws holding the thermostat mounting bracket. Pull out the thermostat bracket.
15. Disconnect wire lead to the thermostat. Remove two screws holding the thermostat to thermostat bracket.
Pull out thermostat capillary and bulb through opening on front cross members.
16. Connect wire leads to corresponding terminals on new thermostat.
17. Reverse steps 13 through 15 so that the thermostat is securely mounted at front with thermostat capillary
and bulb at rear.
18. Wind the thermostat coil (supplied with new thermostat) around capillary of new thermostat at approximately
the same position from the bulb as on the damaged thermostat. The thermostat coil should cover
approximately 11" to 12" of capillary length.
19. Wrap the portion of thermostat capillary, which is covered by the thermostat coil, into approximately two

20. Reassemble the thermostat bulb and capillary by reversing steps 1 through 12 above.
