Ingrédients pour 2 personnes
100 g de farine
1 citron
Sel, poivre
Eperlans vidés, lavés, essuyés sur du papier absorbant
Quelques brins ciselés de persil
Dans un récipient possédant un couvercle, disposer la farine, puis les
éperlans. Fermer le couvercle et secouer.
Le poisson est fariné. Faire tomber l'excédent de farine.
Plonger les ablettes dans l'huile brûlante 180 °C pendant 6-8 minutes.
Les ablettes doivent avoir une couleur dorée assez prononcée.
Egoutter sur du papier absorbant, saler, poivrer. Présenter les
éperlans dressés en buisson, garnis de persil et de quartiers de
citron.
