Simple Salmon
Ingredients
2 salmon fillets (approx. 240 g), pin bones removed
2 tsp lemon zest
2 sprigs of fresh dill (finely chopped)
Salt and pepper, to taste
Method
Fill and preheat the Sous Vide to the preferred temperature:
Rare – 47 ºC
Medium Rare – 52 ºC
Medium – 60 ºC
Sprinkle the salmon fillets with the salt, pepper, lemon zest and fresh dill.
Place the fillets into a cooking pouch and vacuum seal.
Submerge the pouch into the water and cook for approximately 13–15 minutes.
Remove from the pouch and serve.
