CLEANING INSTRUCTIONS

GRIDDLE COOKING SURFACE
Thoroughly clean griddle surface at least once per day:
1.
Scrape excess food and grease into grease trough.
2.
Set temperature control to 110ºC (230ºF).
3.
Pour a small amount of water on the griddle surface and let it "sizzle"
4.
For a standard griddle, use a pumice/grill stone to remove all remaining waste and to clean down
to bright metal. Wipe off any powder residue.
5.
Use a soft bristle brush in a circular motion (or, up and down, in the case of grooved griddles) to
remove any remaining food residue.
6.
Wipe cooking surface with a clean cloth.
Re-season cooking surface ( not required for chrome plated griddles).
1.
Set temperature control to 190ºC (375ºF).
2.
Spread a light film of cooking oil over the griddle surface.
3.
Allow oil to "cook in" for approximately 2 minutes, or until it smokes.
4.
Wipe off excess oil with a clean dry cloth.
5.
Repeat above procedure until the griddle has a slick, clean surface.
6.
Turn temperature control "OFF" and allow griddle to cool.
GREASE TROUGH
The grease trough must be thoroughly cleaned at least once per day:
1.
Use a scraper to scrape all grease and food waste from the trough into the grease drawer.
2.
Wipe with a clean dry cloth to remove any excess grease.
GREASE DRAWER
The grease drawer must be emptied before it overflows, and should be cleaned daily:
1.
Remove drawer from griddle and dispose of all grease and food waste in accordance with local
regulations.
2.
Clean grease drawer with warm water and mild detergent.
3.
Dry drawer thoroughly and reinstall in griddle.
GRIDDLE EXTERIOR
Griddle exterior should be cleaned daily:
1.
Remove splash guards. Clean with warm water and mild detergent.
2.
Wipe griddle exterior surfaces and grease trough with a clean cloth dampened with warm water
and mild detergent. Dry by wiping with a clean dry cloth.
3.
Reinstall splash guards.
