What is dry-aging?
Some beef must first ripen (become "noble") to become the most palatable for consumption. During
drying and cold nobling, the meat product loses a lot of moisture and weight
and enzymes break down the connective tissue. The meat becomes much more
tender and tasty, especially in combination with sous-vide cooking.
