Increase the setting of the pasta maker until the
desired thickness has been reached. This time,
do not fold the pasta in half.
After installing the spaghetti maker, the pasta
slab can be inserted into it to be cut into
spaghetti strands. Alternatively, pasta shapes
can be cut manually with a knife and a cutting
board.
PASTA RECIPES
Basic Egg Pasta
900 grams Italian flour, or more to taste
2 eggs
2 egg yolks, or more as needed
1 teaspoon olive oil
1 pinch of salt
Step 1
Pile the flour onto a work surface and make a small
well in the centre; place eggs, egg yolks, olive oil, and
salt into the well. Gently stir the egg mixture with a
fork, gradually drawing in the flour until the dough
comes together.
Step 2
Knead the dough with your hands until smooth and
leathery for about 10 minutes.
Step 3
Wrap the dough in cling film; let it rest until
malleable for 1 to 2 hours. Remove the cling film.
Step 4
Cut the dough into four pieces; roll out with a
rolling pin. Run the flattened pieces through a pasta
machine to create the desired noodle shape.
Wholewheat Pasta
350 grams plain flour
350 grams wholewheat flour
½ teaspoon sea salt
4 eggs
2 teaspoons olive oil
Step 1
Mix the all-purpose flour, wholewheat flour and salt
in a medium-sized bowl, or on a clean cutting board.
Make a hollow in the centre, and pour in the olive oil.
Break eggs into it one at a time, while mixing quickly
with a fork until the dough is wet enough to come
together. Knead on a lightly-floured surface until the
dough is stiff and elastic. Cover, and let it stand for
30 minutes to relax.

Roll out the dough by hand with a rolling pin, or use
a pasta machine to achieve the desired thickness of
noodles. Cut into the desired width and shapes. Allow
the pasta to dry for at least 15 minutes to avoid it
clumping together.
