INTRODUCTION
These accessories are designed for use with the
Bourgini Kitchen Mixer article 22.5195.
The accessories also fit machines from Kitchen Aid
and AEG. These brands are not part of Bourgini,
and have an independent trademark registration.
Visit www.bourgini.com for a list of suitable food
processors.
Also read the operating instructions of the respective
kitchen mixer before installing and using these
accessories.
The Bourgini pasta roller turns pasta dough into a
slab, which can be "rolled" to the desired thickness.
You can then cut spaghetti strands from this slab
with the Bourgini Spaghetti maker. Other pasta
shapes can also be cut using a knife and cutting
board, such as lasagne, ravioli, tortellini and linguine.
WARNING
Do not allow your fingers to get between the moving
parts. Do not use cutlery to push the pasta through,
but allow the attachment to gently pull the pasta in.
Do not wear very wide or loose-fitting clothing or
a tie or scarf that might get caught by the rotating
parts. Also take care with long hair.
Use the accessories for preparing pasta only, and
not for other materials.
CLEANING
Do not clean the accessories while these are still
attached to the kitchen mixer. Remove them from the
mixer first.
Clean the accessories before first use and after
each subsequent usein mild soapy water, using
a washing-up brush but not a scouring pad. Then
rinse thoroughly with clean water. Do not soak the
accessories in water for long periods of time. After
washing, shake off excess water and dry with a cloth.
The accessories are not dishwasher safe!
FITTING ONTO THE KITCHEN MIXER
Make sure the kitchen mixer is switched off
and unplugged from the wall socket.

Remove the cover on the front of the kitchen mixer
by turning the screw knob counterclockwise.
Insert the accessory into the square coupling (visible
at the rear of the opening) with a rotating motion, so
that the shaft falls into the coupling.
Press the accessory firmly into the opening, and
firmly turn the screw knob clockwise again.

MAKING PASTA
Cut the dough into pieces that fit into the pasta
maker
Pull out the adjusting knob (Fig. 3) and turn it
to position 1. Release the knob while turning
it slightly, allowing it to return to its original
position.
Set the mixer to speed 2 and feed the dough
slowly into the pasta maker (Fig. 4). Sprinkle
some flour onto the pasta from time to time, to
speed up the drying process. Fold the pasta slab
