Whenusingaluminumor
aluminum-clad stainlesssteel
potsand pans,adjustthe flameso
the circleit makesis about1/2inch
smallerthanthebottomof the

cookjust as quicklyat a gentleboil
as theydo at a furiousrollingboil.
A highboilonlycreatessteamand
cooksawaymoisture,flavorand
nutrition.Avoidit exceptfor the
fewcookingprocesseswhichneed
a vigorousboil.
Whenfryingor warmingfoods
in sbinless steel, castironor
enamelware, k eepthe flamedown
lower—to about 1/2the diameter
of thepan.
Whenfryingin glassor ceramic
cookware,lowerthe flameeven
more.
An air adjustmentshutterfor each
surfaceburner regulatesthe flowof
air to the flame.
Whenthe rightamountof air
owsintothe burner,the flame
willbe steady,relativelyquietand
haveapproximately 3/4 inchsharp
bluecones.This is usuallythecase
with factorypresetshutters.
Withtoo muchair,the flamewill
be unsteady, p ossiblywon'tbum all
the wayaround,and willbe noisy,
soundinglikea blowtorch.
Withnot enoughair,youwon't
see anysharpblueconesin the
flame,youmaysee yellowtips, and
sootmayaccumulateon cookware.
Air Shutter
If an air adjustmentis needed,
removethe controlknobsand
controlpanel.
If the flamesareyellow,use pliers
to openthe air shuttermore. If
theyblowawayfromthe burner,
closethe air shuttermore. Be sure
to keepthe gap in the air shutter
facingstraightup. Be carefulnotto
distortthe air shutterwhenmaking
adjustmentswiththe pliers.

Nowlook at the innerconeofthe
flame. It shouldbe about3/4"long
for all surfaceburners. If the flame
is notthe right length,the orifice
hood mustbe adjusted.Use a 1/2"
openend wrenchto tightenthe
orificehoodby turningin the L.P.
directionto shortenand the Nat.
directionto lengthen.
Cookware
Aluminum:Medium-weight
cookwareis recommendedbecause
it heatsquicklyand evenly.Most
foodsbrownevenlyin an aluminum
skillet.Mineralsin foodand water
will stainbut will notharm
aluminum.A quickscourwitha
soap-filledwoolpad after eachuse
keepsaluminumcookwarelooking
shinynew.Use saucepanswith
tight-fitting lids for cookingwith
minimumamountsof water.
CastIron:If heatedslowly,most
skilletswillgivesatisfactory
results.
Enamelware: Under some
conditions,the enamelof some
cookware maymelt.Follow coo-'
manufacturer's recommendations
for cookingmethods.
Glass:There are twotypesof glass
cookware—those f or ovenuse only
andthosefor top-of-range cooking
(saucepans,coffeeand teapots).

HeatproofGlassCeramic:Can
be used for eithersurfaceor oven
cooking.It conductsheatvery
slowlyand coolsvery slowly.
Checkcookwaremanufacturer's
directionsto be sure it canbe used
on gasranges.
StainlessSteel:Thismetalalone
haspoorheatingproperties,
andis usuallycombinedwith
copper,aluminumor othermetals
for improvedheatdistribution.
Combination metalskilletsgenerally
worksatisfactorilyif usedat
medium"heat a s the manufacturer
recommends.
