SWEET MUFFINS cont'd
BLUEBERRY MUFFINS
Makes 6
1 1 ⁄ cups self-raising flour

1 ⁄ cup brown sugar

3 ⁄ cup blueberries
4
1 teaspoon grated lime rind
1 egg lightly beaten
3 ⁄ cup (180ml) milk
4
6 tablespoon (90g butter), melted
Preheat Muffin Magic until green 'ready'
light illuminates.
Mix: Mix the flour, brown sugar and
blueberries in a bowl. In a separate
bowl lightly whisk egg, milk and
butter together.
Pour the liquid ingredients into
the flour and stir with a spoon until
just combined.
Fill: Spray Muffin Magic with non stick
spray and spoon mixture into cavities
to fill level to the top.
Bake: Close the lid and bake for
approximately 15 minutes.
Remove and allow to cool on wire rack for
5 minutes. Cook remaining muffins.

APPLE AND SPICE MUFFINS
Makes 6
1 1 ⁄ cups self-raising flour

1 ⁄ cup caster sugar

1 ⁄ teaspoon cinnamon

1 medium Granny Smith apple, peeled, cored
and finely chopped
1 egg lightly beaten
3 ⁄ cup (180ml) milk
4
6 tablespoon (90g) butter, melted
1 tablespoon sugar, extra
1 teaspoon cinnamon, extra

apple in a bowl. In a separate bowl

sugar and cinnamon and sprinkle

1 medium banana, mashed
1 egg lightly beaten
1 ⁄ cup (65ml) milk
2
6 tablespoon (90g) butter, melted

Mix: Mix the flour, brown sugar and pecan
nuts in a bowl. In a separate bowl
combine banana, egg, milk and
butter together.
Pour the liquid ingredients into
the flour and stir with a spoon until
just combined.
Fill: Spray Muffin Magic with non stick
spray and spoon mixture into cavities
to fill level to the top.
Bake: Close lid and bake for approximately
15 minutes.
