Prosciutto wrapped Chicken with a Creamy Pesto Filling
This is a great recipe to use with the delicious homemade pesto sauce. Serves 2.
Ingredients:
• 2 medium size boneless chicken breasts, skin removed
• 4 slices Prosciutto di Parma
• 2 tablespoons pesto sauce
• 2 tablespoons cream cheese
Preparation method:
1. Take a sharp knife and make a slit along the side of each chicken breast to
make a small pocket.
2. Mix the pesto sauce and the cream cheese together and use to fill the
pockets in the chicken breasts.
3. Lay 2 pieces of Prosciutto di Parma on a cutting board so they are side by
side and slightly overlapping. Place the chicken in the center of the piece
and wrap the Prosciutto around the chicken so it seals the pocket.
4. Place in a baking dish and heat in the oven at 350 °F for 20–25 minutes until
the Prosciutto is crisp and the chicken is thoroughly cooked.
Rib Eye Steaks with Chimichurri Salsa
Serves 2.
Ingredients:
• 2 boneless rib eye steaks about 1.5-inch thick at room temperature
For the Salsa:
• 1 small bunch parsley, washed and stalks removed
• 1/2 teaspoon oregano leaves
• 1/2 red onion
• 2 garlic cloves
• 2 tablespoons red wine vinegar
• Pinch of red chili pepper flakes
• 1 tomato, de-seeded
• 2 tablespoons olive oil
• Sea salt and pepper
Preparation method:
1. Place a 10-to-12-inch cast-iron skillet on the range over a high heat and
leave to heat up.
2. Coat the steak lightly with oil and sprinkle both sides with a generous pinch
of salt. Grind on black pepper.
