Signature Chili
Add corn, substitute turkey for ground beef, or omit meat as desired.
Olive oil
2 pounds hamburger
1 12-ounce can beef broth
1 teaspoon oregano
3 teaspoons chili powder
1 teaspoon cumin
5 cloves garlic
2 12-ounce cans pinto beans, drained and rinsed
2 12-ounce cans of red kidney beans,
drained and rinsed
5 dashes hot sauce
Optional garnishes:
Shredded Cheddar cheese
Chopped avocado
Sour cream
Chopped fresh cilantro
1. Set pressure cooker to browning mode and add olive oil. Crumble and brown meat; drain fat.
2. Add all other ingredients to the pressure cooker.
3. Cover and cook under pressure for 25 minutes or press program indicator for Stew
4. Garnish as desired.
Serves 3-4

Beef Bourguignon

3 pounds beef chuck, cube
½ cup flour
1 teaspoon salt
1 teaspoon pepper
½ pound bacon, diced
Olive oil
2 onions, sliced
1. Mix the flour, salt, and pepper. Coat beef in flour mixture.
2. Add bacon to pressure cooker and set to Browning mode
and set aside.
3. Add oil to pressure cooker and set to Browning mode
4. Add remaining ingredients and bacon back to pressure cooker. Cover and cook under pressure
for 25-30 minutes or press program indicator for Stew
Serves 6-8

2 28-ounce cans crushed Italian tomatoes
1 12-ounce can of tomato paste
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 red pepper, diced
1 green pepper, seeded and diced
2 Serrano chili peppers, minced
1 long red pepper, diced
2 chipotle peppers in adobe sauce
1 cup mushrooms, sliced
1 cup fresh parsley, minced
6 teaspoon minced garlic
4 bay leaves
2 cups red or white wine
1 cup beef broth
 
(optional)
. Cook bacon, drain fat
. Sear beef on all sides.
