Pizza Dough

1-1/2 cups water
3 tablespoons olive or vegetable oil
4-1/2 cups bread flour
1-1/2 teaspoons sugar
1 teaspoon salt
3 teaspoons regular active dry yeast
OR
3 teaspoons bread machine yeast or quick-acting active dry yeast
DIRECTIONS:
1. Remove bread pan; attach kneading blade.
2. Place all dough ingredients in bread pan in order listed.
3. Insert bread pan, close lid and plug in.
4. Press SELECT until setting number 9 is displayed. Press START.
5. Move oven rack to lowest position. Heat oven to 400ºF.
6. Grease 2 cookie sheets. Divide dough in two pieces. Let rest 10 minutes. With oiled fingers,
pat each half of dough into a 12 x 15-inch rectangle on each cookie sheet.
7. Spread with favorite toppings.
8. Bake each pizza 18 to 20 minutes at 400ºF or until crust in light brown.
Herb-Cheese Pizza Crust: Add 2 tablespoons grated Parmesan cheese and 1-1/2 teaspoons dried
basil, oregano, thyme or Italian seasoning with the flour.
Whole Wheat Pizza Crust: Decrease bread flour to 1-1/2 cups and add 1-1/2 cups whole wheat flour with the bread flour.
Select WHOLE WHEAT DOUGH cycle.
Bagels
1 cup water
1-1/2 tablespoons honey
2 cups bread flour
1 cup whole wheat flour
1-1/2 teaspoons salt
1-1/2 teaspoons regular active dry yeast
OR
1-1/2 teaspoons bread machine yeast or quick-acting active dry yeast
DIRECTIONS:
1. Place all ingredients in bread pan in the order listed. Press SELECT until the number "9" is displayed,
indicating the Dough Cycle. Press START. Remove dough from bread pan 50 minutes after starting.
2. Generously grease cookie sheet. Cut dough into 12 pieces. Roll each piece into 7-inch rope. Shape
each rope into circle. Brush one end with water; press ends together. Place on cookie sheet.
Cover; let rise in warm place about 20 minutes or until almost double.
3. Heat oven to 350°. Heat 2 quarts water to boiling in 4-quart Dutch oven. Lower 3 or 4 bagels at a time
into boiling water. Boil 30 seconds, turning once. Remove with slotted spoon to paper towels.
Sprinkle with instant minced onion, sesame seed or poppy seed if desired. Place on cookie sheet.
4. Bake 8 minutes or until light golden brown. Remove from cookie sheet.
Cool on wire rack. 12 bagels.
