General Information
 Cook time duration is influenced by cook temperature. Higher
temperature shortens the cook cycle. Lower temperature extends the
cook cycle.
 For easier cleaning and to prevent sticking, spray product racks with
vegetable oil cooking spray.
 Woodchip box(es) must be installed on the smoke elements at all times
during operation of the smoker. Failure to do so can damage the smoke
elements and/or result in terminal failure of the smoker.
 Do not overload woodchip box(es).
 Woodchip box(es) will be hot when the smoker has been in operation.
Optional Features
 Units equipped with the steam feature have one smoker element (left)
and one steam pan (right).
 The steam pan and steam pan cover must be installed on the steam
element bracket at all times during operation of the smoker. Failure to
do so can damage the steam element and/or result in terminal failure of
the smoker.
 The steam pan should only be filled with water.
 Fill the steam pan with 6 quarts (5.6 liters) of water.
 Optional meat probe can monitor the product temperature during the
cook cycle. The meat probe must be plugged into the socket inside the
smoker with the probe inserted into the product. The tip of the probe
should be inserted into the thicker part of the product and not against a
bone.
