The document does not provide information on how to reset the thermal cut-offs on the Elson Aquanox. However, it clearly states: "DO NOT bypass the thermal cut-out(s) in any circumstances."
Regarding recommended temperature settings: the thermostat adjustment range is from 37°C to 85°C, with 75°C being approximately position 4 on the dial. This is also stated as the normal working temperature.

MANUAL FILL VERSION MANUAL FILL The store is provided with a flexible temporary filling loop which MUST be disconnected after installation to comply with the requirements of the Water Supply (Water Fittings) Regulations 1999. The feed & expansion header tank water level should be checked regularly. If required fill with clean cold water via the filling loop to the appropriate level as shown on the sight glass. Do not overfill the tank. Ensure that the header tank lid is securely replaced, this reduces the amount of water lost through evaporation during operation.
• Check operation of the blending valve and test that COMMISSIONING the water temperature (hot flow mix) is at 55°C when the store temperature is operating at 75°C. • Check operation of the immersion heater FILLING THE UNIT WITH WATER thermostats and settings.
