Inform local law enforcement at once if your intervention fails to prevent an intoxicated
person from driving – give the vehicle description and tag number.
Do not drink alcoholic beverages while working nor serve alcoholic beverages while intoxicated.
If you sell/serve alcoholic beverages you must successfully complete a TABC Seller/Service
training course or an alcohol class that is applicable to your state or county. You must maintain
your certification throughout employment.

As a Fish City Grill server, we ask that your knowledge include food, service and wine. The proper wine
can truly enhance the dining experience for our customers and can also enhance your tip!
There are certain tools for proper wine service:
Always have a wine key in your apron as part of your uniform.
Have knowledge of your wines and wine list.
Make sure that your wine glasses are clean and are spot free.
Always use a bev nap when placing a beverage in front of the customer.
Presenting the Wine
Present the wine to the person who ordered the bottle. The label should be facing toward them.
State the name of the wine and make sure the wine is correct prior to opening it.
Hold the bottle of wine firmly and cut the foil just below the thick lip of the bottle. Remove the foil
and place it in your apron.
Place the tip of the wine opener in the center of the cork and, with steady pressure, twist into the
cork.
Place the hinge against the lip of the bottle. Concentrate on pulling the cork straight out of the
bottle. Slow down when the cork is about to come out of the bottle and gently rock it to prevent a
"popping" sound.
Remove the cork from the wine opener and place the cork in front of the customer who ordered the
wine.
Pour ½ oz. into the glass of the customer who ordered it. DO NOT pick up the glass.
After they approve, offer wine to everyone else at the table. Remember ladies first.
If you are not comfortable opening a bottle of wine, the best way to build your confidence
is practice, practice, practice. Get with the bartender and help them to open bottles
Wine Serving Tips
Continue to fill the wine glasses as you check back with your table.
Do not pick up the wine glass to refill – always pour from bottle directly into the wine glass where
it sits on the table.
Do not rest the bottle on the rim of the glass while pouring the wine.
