    Twice Baked Potatoes Ingredients: 2 large Russet potatoes ¼ cup sour cream or Greek yogurt 1 tbsp olive oil 1 cup of shredded cheddar cheese 2 slices bacon, chopped salt and coarse black pepper 2 tbsp chives, chopped Directions: Preheat the oven to 400ºF. Using a vegetable brush, scrub the potatoes clean under running water. Poke each potato several times with a fork to vent.
