DAIRY PRODUCTS
Eggs Whole

Do not freeze eggs in their
shells as they will crack.

containers just a few at a time.
As for whites, but to prevent
coagulation mix with % tsp. salt or
Vztsp. caster sugar to every two yolks.
Use for savoury or sweet
dishes, label so that
correct yolks are used.

Wrap bought butter in foil and freeze
Cream
Whipping and

Must first be beaten lightly before
freezing. Rosettes of whipped cream
can be piped onto silicone paper and
open frozen.

Freeze in quantities of 275ml 04 pint)
A little extra liquid may be required,
when you come to use it.
Egg based sauces are
unsuitable
Full courses

Assemble individual helpings on
specially constructed aluminium trays,
then cover with foil. To re-heat leave
the cover on and put in the oven for
about 45 minutes at 200°C/Mark 6.
Cover slices of meat with
gravy to prevent drying out
