Guacamole
1 large (200 g) red tomato, quartered
1 small onion, quartered
1 to 3 jalapeno peppers
6 to 8 sprigs cilantro
2 large ripe avocados, halved, peeled, quartered
1 small lime, juiced
Salt
Directions:
1. In molcajete bowl, add tomato, onion, peppers, and cilantro.
Process until chunky; place in serving bowl.
2. Add avocado and juice to molcajete bowl; process until chunky.
Remove and add to serving bowl. Salt to taste.
Serves: 6–8

Salsa Borracha — also known as Drunken Salsa
1 pasilla chile
40 g oil
3 (270 g) tomatillos
1 small onion, finely chopped
1 garlic clove
100 ml beer
½ orange, juiced
30 g crumbled feta cheese
Salt
Directions:
1. Remove stem and seeds of peppers and cut in medium-size pieces.
2. In a skillet, heat oil and cook peppers about 5 minutes.
3. Add tomatillos, half the onion, and garlic; cook until lightly
browned.
4. Stir in beer and cook 5 minutes.
5. Place cooked ingredients in molcajete bowl; process until smooth.
6. Stir in orange juice, and salt to taste.
7. To serve, top with remaining onion and cheese.
Serves: 6–8
