Proper air balance should be maintained in the room. • Ensure that your ventilation system does not cause a down draft at the fryer’s flue opening. Down draft will not allow the fryer to exhaust properly and will cause overheating which may cause perma- nent damage.

Fryer is not to be used during a power outage. HIGH LIMIT CONTROL Avantco Donut Fryers are equipped with a secondary heat control that prevents the oil temperature from rising above 450°F. (Because of the accuracy tolerance of the sensor, the oil temperature may reach as high as 475°F.)
User Manual FILLING TANK WITH SHORTENING Solid shortening must NOT be used with this fryer. Melting solid shortening will NOTICE damage the tank and void your warranty. NEVER melt blocks of solid shortening on top of the heat tubes. This would WARNING cause a fire and could result in personal injury.

User Manual Checking and adjusting pressure regulator The combination gas valve (includes pressure regulator) is factory set at 4" W.C. for natural gas and 10" W.C. for liquid propane gas.
