My Estella DSC78 is no longer holding thickness very well. I will set the thickness to 15mm for example, then as soon as the dough reaches the roller it will push the roller up to 18mm or higher.

To fix the thickness issue with your Estella 348DSC67 dough roller, follow these steps:
1. Adjust the Thickness Handle: Set the thickness adjustment handle to the desired setting. 2. Start with the Thickest Setting: Begin rolling the dough at the thickest setting and gradually decrease the thickness. 3. Avoid Forcing Thick Dough: Do not force thick dough through a narrow setting, as this can cause the machine to malfunction. 4. Use the Directional Control: Operate the directional control to work the dough through the rollers until the desired thickness is reached.
If the issue persists, check for any obstructions or wear in the machine and ensure it is properly maintained.

If your Estella 348DSC67 dough sheeter is only rolling dough in one direction, the issue could be a worn-out worm wheel. The solution is to change the worm wheel.
