Green Chili Chicken & Rice Tacos
1 cup rice
2½ cups low-sodium chicken broth
1 tablespoon dried minced onion
¼ teaspoon salt
1 5-ounce can chicken breast,
chunks with liquid
8 small corn tortillas
½ 4-ounce can diced green chilies
with liquid

Make sure the Food Processor is unplugged.
2. Place all ingredients into the inner pot and stir until evenly distributed.
3. Place the inner pot into the rice cooker, close the lid and press the COOK switch. Allow rice
to cook until the rice cooker switches to "Keep-Warm." Warm tortillas, spoon the Green
Chile and Chicken Rice equally into the tortillas. Add sour cream, cheese and salsa, as
desired.
4. Fold tortillas to form tacos and enjoy!
Southwestern Rice
1 cup of basmati rice
2 cups of tomato juice
1 tablespoon of cumin seed oil
1 small red onion, diced
1 red pepper, diced

Put rice and tomato juice into a saucepan and bring to a boil. Turn heat down, cover with
a lid and simmer until all of the liquid has been absorbed, about 15 minutes. Toss with fork
and let cool slightly.
2. Heat cumin seed oil in a large skillet. When it begins to smoke, add onions and peppers
and sauté quickly until they are softened and slightly caramelized. Add corn and continue
to cook for about 3 minutes. Add rice, season with salt and pepper and stir-fry until
incorporated. Stir in green onions, cilantro and lime juice and adjust seasoning.
Optional Ingredients:
Sour Cream
Cheese
Salsa
2 cobs of corn, kernels removed
and cobs discarded
4 green onions, chopped
1/4 cup of fresh cilantro, chopped
Juice of 1 lime
Salt and pepper
