    Pies & Tarts If making pies and tarts use the Reversible Pie Cutter to make the molds. The larger side is for the pie base, and the smaller for the pie lid. The slits in the base mold allow you to overlap the dough for a better fit in the mold. Unless the recipe states otherwise we recommend using Puff Pastry dough for the lids, and standard pie dough for the base.

  • Page 8 Method Melt the butter in a saucepan, add the onion, celery and carrot and cook over a medium heat for 5 minutes until the vegetables are slightly softened. Stir in the flour and cook over a medium heat for 1 minute. Blend in the milk and bring to the boil stirring continuously until thickened.
  • Page 9 Smokey Bacon Quiches Makes: 2 quiches Ingredients 2 eggs, beaten 2 tablespoons of double cream 50g smoked bacon, chopped and cooked 50g onion, peeled and chopped 50g potatoes, cooked and chopped 25g gruyere cheese 25g parmesan cheese Seasoning 1 tablespoon fresh parsley, finely chopped 200g shortcrust pastry, rolled and cut with the large side of the cutter to make 2 pastry bases Method Preheat the pie maker until the green light comes on.
  • Page 10 Blend in the stout and stock and bring to the boil stirring continuously until slightly thickened. Add the mushrooms, vinegar and seasoning. Reduce the heat, cover and simmer gently for 90 minutes until the beef is tender (add a little more stock during cooking if required).
  • Page 11 Method Preheat the pie maker until the green light comes on. Mix the flour, sugar, poppy seeds and lemon zest together in a mixing bowl. Beat the yogurt, butter and egg together and stir into the dry ingredients. Mix together with a wooden spoon until a lump free mixture is formed. Do not over mix. Place a muffin case into each pie well and fill 2/3 way with the mix.
  • Page 12 Pastry Case Makes: 2 cases Ingredients 200g shortcrust pastry, rolled and cut with the large side of the cutter for 2 bases Method Preheat the pie maker until the green light comes on. Press a pastry base into each pie well. Prick the base. Close the pie maker and cook for 8-10 minutes until the pastry is golden brown and cooked.
