Soak 1 1⁄2 cups dried peaches in the refrigerator overnight. Then
stew until soft (about 45 minutes). Chop peaches. Add a mixture of:
1 1⁄2 tablespoon cinnamon
1⁄2 cup white or brown sugar
2 tablespoons water
Add mixture to peaches and stir lightly. Pour into unbaked pie crust,
cover with top crust. Bake 35 to 45 minutes until golden brown at
350°F.
2 cups dried apples
1 cup sugar brown or white
1⁄4 teaspoon salt
2 tablespoons flour
1 double pie crust recipe
Reconstitute apples by adding just enough water to cover the apples.
More water can be added if necessary. Soak for about four hours.
Over-soaking will produce a loss of flavor.
Sift dry ingredients together and mix with the rehydrated apples. Line
pie pan with pastry. Fill with apple mixture, dot with butter and cover
with top crust. Bake at 450°F 15 minutes; reduce temperature to
350°F and bake 45 minutes longer. Makes one 9-inch pie.
