SPECIAL REQUEST DIETARY ICE CREAMS

SKIM MILK VANILLA ICE CREAM
3 cups skim milk
½ cup skim milk powder
½ cup sugar
2 teaspoons or 10g sachet gelatine
3 tablespoons water
½ teaspoon vanilla extract
1. Combine skim milk, skim milk powder and sugar
in a saucepan. Stir over medium heat until sugar
dissolves. Remove from heat.
2. Sprinkle the gelatine over the water and soak for
2-3 minutes. Dissolve gelatine mixture over a bowl
of warm water.
3. Combine 1 cup of skim milk mixture with gelatine
mixture and vanilla extract, stir until smooth.
4. Pour this mixture into remaining skim milk mixture
and stir until smooth.
5. Place mixture into a pouring jug or bowl, cover and
refrigerate for 1-2 hours or until completely chilled.
6. Stir mixture before pouring into rotating Freezer
Bowl. Process until desired consistency is achieved.
LITE MILK VANILLA ICE CREAM
3½ cups lite milk
½ cup sugar
2 teaspoons or 10g sachet gelatine

2½ cups evaporated skim milk
¼ cup skim milk powder
½ cup granulated Splenda
2 teaspoons or 10g sachet gelatine
3 tablespoons water
1 teaspoon vanilla extract
1. Process skim milk, skim milk powder and Splenda
in a food processor or blender on low speed until
the mixture is smooth and the sugar dissolves.
2. Sprinkle the gelatine over the water and allow to
soak for 2-3 minutes. Dissolve gelatine mixture over
a bowl of warm water.
3. Combine 1 cup of skim milk mixture with gelatine
mixture and vanilla extract, stir until smooth. Pour
this mixture into remaining skim milk mixture and
stir until smooth.
4. Place mixture into a pouring jug or bowl, cover and
refrigerate for 1-2 hours or until completely chilled.

NON-DAIRY VANILLA ICE CREAM
2 teaspoons powdered agar agar
3 cups vanilla flavoured soy milk drink
½ cup castor sugar
¹⁄ ³ cup sunflower or safflower oil
1-2 teaspoons vanilla extract
NON-DAIRY CHOCOLATE ICE CREAM
2 teaspoons powdered agar agar
3 cups chocolate flavoured soy milk drink
½ cup castor sugar
¹⁄ ³ cup sunflower or safflower oil
1-2 teaspoons vanilla extract
NON-DAIRY CAROB ICE CREAM
2 teaspoons powdered agar agar
3 cups carob flavoured soy milk drink
½ cup castor sugar
¹⁄ ³ cup sunflower or safflower oil
1-2 teaspoons vanilla extract
METHOD FOR THE ABOVE RECIPES
1. Combine agar agar and 1 cup soy milk drink in a
saucepan. Stir over a medium heat until agar agar
dissolves and milk begins to boil. Remove from
heat.
2. Process agar agar mixture with remaining
ingredients in a food processor or blender until
sugar dissolves.
3. Place mixture into a pouring jug or bowl, cover and
refrigerate for 1-2 hours or until completely chilled.
4. Stir mixture before pouring into rotating Freezer
Bowl. Process until desired consistency is achieved.
